Happy 4th of July!

As most of us get ready to celebrate America's Birthday this weekend we wanted to share some of our go to recipes for our own Independence Day menus.  Everyone has that one recipe that they grew up with on a specific holiday that they can't do without!  It just doesn't seem like Christmas to me without my Granny's famous stacked pie and don't even think about Thanksgiving without my mom's stuffing!  4th of July just doesn't seem the same to me without grilled corn on the cob!  It's one of my favorite sides all summer but this weekend it's an absolute must!

This is one of my favorite recipes - it comes out perfect every time!

CLASSIC GRILLED CORN ON THE COB


Ingredients:

6 large ears yellow or white corn with husks (about 5 lb.)

1/4 cup butter, cut evenly into 12 pieces

3/4 teaspoon kosher salt

1/4 teaspoon black pepper


Directions: 

 Step 1

Preheat a gas grill to medium-high (400°F to 450°F) on 1 side, or push hot coals to 1 side of a charcoal grill.

 Step 2

Working with 1 ear at a time, grab silks at top of corn with half the silks in each hand. Slowly peel silks down, 1 side at a time, peeling back all silks and husks in 1 motion. Discard silks; pull husks together to form a ponytail-like handle. Tear off 1 small husk piece; use it to tie a knot around husks to secure.

 Step 3

Coat corn with cooking spray; place on unoiled grates on lit side of grill. Grill, uncovered, turning occasionally, until charred in spots, 15 to 18 minutes. Hang husks over edge of grill to prevent burning.

 Step 4

Remove corn from grill. Wrap individually in aluminum foil, excluding husks, placing 2 butter pieces on each ear. Put wrapped corn on unlit side of grill. Cover grill to keep warm until ready to serve, at least 5 minutes or up to 30 minutes. Unwrap corn; sprinkle with salt and pepper.

Another one of my favorites has always been Peach Cobbler!  Summer is just not the same without fresh peach cobbler and vanilla ice cream!  This is one of my go-to peach cobbler recipes for sharing!

PEACH COBBLER


Ingredients:

8 large peaches, peeled and cut into eighths

1 cup sugar

1/3 cup chopped crystallized ginger

1 (16.5-oz.) box super-moist white cake mix (such as Better Crocker)

3/4 cup regular oats

1/2 cup butter, melted 

1/4 cup ginger ale

1/4 teaspoon nutmeg

1/4 teaspoon kosher salt

1 teaspoon vanilla extract


Directions:

 Step 1

Toss together peaches, sugar, and ginger in a 6-quart slow cooker.


 Step 2

Combine cake mix and remaining ingredients; spread over peach mixture. Cover and cook on HIGH 2 to 3 hours. Remove lid and let stand 15 minutes.
